				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/06/img_2011.jpg"><img class="alignleft size-medium wp-image-388" title="IMG_2011" src="http://asholet.files.wordpress.com/2012/06/img_2011.jpg?w=300&#038;h=200" alt="" width="300" height="200" /></a>While Tom and I were in Vegas a while back, we took the most fabulous cab ride I&#8217;ve ever been on.  Our sweet as honey &#8220;only Hawaiian cab driver in Vegas&#8221;(his words) gave us a long list of local delicacies to check out.  While we still have quite a bit of the list to go back for, our favorite place was a tapas bar just off the strip called <a href="http://www.fireflylv.com/" target="_blank">Firefly*</a>.  Our cabby went into this mouthwatering description of his favorite dish to get, Bacon wrapped dates stuffed with smoked almonds and topped with blue cheese crumbles and a to die for red wine reduction sauce&#8230; Ok, Take us there NOW!  We had to wait about 30 minutes for a table which, in Vegas on a saturday night, is not uncommon.  So naturally we went to the bar and ordered up some margaritas, I don&#8217;t know why I said naturally&#8230; Well, we met while working at Fidel&#8217;s, a local favorite mexican food joint that really does it right, at least for us, where we&#8217;ve had our fair share of deliciously potent &#8220;margis&#8221;&#8230;  So we almost never order margaritas anywhere due to constant disappointment, but these were surprisingly up to our very spoiled standards.  &#8221;Off to a good start!&#8221; I thought.  There was this totally cute secluded tiny circle booth I had my eye on and it had just opened up when the hostess walked up to us indicating our table was ready, &#8220;Could it be?&#8221;, NO&#8230;. No it can&#8217;t, we walked right past it to a table squished between two other parties where I had to shimmy my tushy past a couple of too close noses to take my seat, AWKWARD!  As much as Tom and I value our privacy, we ended up falling in love with the mother daughter duo that was seated next to us about halfway through our meal.  They were just the sweetest, funniest, most stylish girls&#8230; I must say we had a lot in common <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> .  They were regulars and gave us a few must know tips: Sangria, get a pitcher or you&#8217;ll regret it; Save room for Sorbet and&#8230; GET THE APPLE SALAD.  So now that I&#8217;ve talked about vegas, hawaiians, bacon, wait times, margaritas, mexican restaurants, close quarters, chance encounters and sangria&#8230; I&#8217;ll finally get to business and show you how I recreated the salad we are all here for, you&#8217;re welcome.</p>
<p>Recipe&#8230;</p>
<p style="text-align:center;"><strong>Apple and Manchego Salad</strong></p>
<p style="text-align:center;">Serves 2</p>
<ul>
<li>One green apple cored, peeled and cut into matchsticks</li>
<li>About 2 oz. of manchego cheese cut into matchsticks</li>
<li>4 tbsp of apple cider vinegar</li>
<li>1/4 cup of extra virgin olive oil</li>
<li>Salt to taste</li>
<li>1-2 tbsp smoked almonds (I liked the smokehouse brand that come in a can best, I tried the ones you can buy in bulk at sprouts and found them to be lacking in flavor.)</li>
</ul>

I would say the size of a thin french fry. Do the same with the cheese and add them both to a medium bowl.</p></div>

When it&#8217;s tangy but not overwhelmingly tart, add it to your apple and cheese sticks, stir to coat and stack neatly on your serving plate.</p></div>

This salad really is too easy to be this good. The flavors are simple, clean and balanced, I hope you enjoy it as much as we do!</p></div>

				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/05/img_2035.jpg"><img class="alignleft size-medium wp-image-362" title="IMG_2035" src="http://asholet.files.wordpress.com/2012/05/img_2035.jpg?w=300&#038;h=200" alt="" width="300" height="200" /></a>I hadn&#8217;t made burgers in quite some time but when we went to my moms to celebrate mothers day I asked her what she wanted and she answered Burgers&#8230; What?  I guess she was trying to make my life easier since there was about 12 people to feed.  So I made some burgers from scratch, it could have been the beer but I had to have seconds!  I&#8217;m not usually a burger person, ground beef just doesn&#8217;t inspire me, until now!  Last night I was craving some protein after our workout so I whipped these bad boys up!  Originally I bought black beans to go inside the burger meat but the last time I added them there was a slight gritty texture, so why not turn them into my <a title="Spicy “Refried” Black Beans" href="http://asholet.wordpress.com/2012/04/12/spicy-refried-black-beans/">Spicy Refried Black Beans</a> and use them as a sauce?  OOOOOO&#8230; and what if I throw a fried egg on top?  I must admit, two patties was a bit gluttenous of me, so I told myself that I would save half for lunch then next day.  It was so mouthwateringly good that my fork just kept going back for more, I mean beyond flavorfully exciting and texturally divine, the spicy, meaty, garlicy, eggy, cheesy bites just melted in my mouth.  It&#8217;s not my fault, the FORK did all the hoisting of the perfect protein packed mouthfuls of meaty heaven and I really did try to stop, that evil fork just kept force feeding me and all I was left with was beans for lunch.(Which, hadn&#8217;t I been too full to move, might have been sacrificed as well.)  So, when you feel like having a protein packed blow your mind burger with or without bun, make this!  Remember, make it how YOU like it, use the ingredients you have or like, I did!</p>
<p>Recipe&#8230;</p>
<p style="text-align:center;"><strong>Mexicali Protein Stack</strong></p>
<p style="text-align:center;">Serves 2 hungry protein lovers&#8230;</p>
<p style="text-align:left;">For the Burger Patty</p>
<ul>
<li>1 lb of 85% lean ground beef</li>
<li>1/3 cup panko bread crumbs (or homemade if you have them)</li>
<li>1/4 cub milk (I used 1%)</li>
<li>1 large egg</li>
<li>2-4 cloves of garlic (I used 4 which was a lot but I LOVE garlic, if you want a mild garlic flavor go with 1-2)</li>
<li>1 s-m shallot</li>
<li>1/3 cup chopped fresh cilantro</li>
<li>1/2 tsp fresh cracked pepper</li>
<li>1 tsp kosher salt</li>
<li>1/4 tsp red pepper flakes (or more to taste, I used less in the burger and made the beans REALLY spicy for a nice contrast)</li>
</ul>
<p>Toppings</p>
<ul>
<li>2 large eggs fried OE in 1/2 tbsp butter with a pinch of salt and pepper</li>
<li><a title="Spicy “Refried” Black Beans" href="http://asholet.wordpress.com/2012/04/12/spicy-refried-black-beans/">Spicy Refried Black Beans</a> (amp up the spice level, keep things exciting!)</li>
<li>4 thick slices of Manchego cheese</li>
</ul>

Mix until all ingredients are just combined but be careful not to over work the mixture, as this could make your meat tough.</p></div>

Burgers tend to puff up in the center when cooked, make them like these and you will have flat, uniform burgers. Perfect for stacking <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /></p></div>

Mine took about 5 minutes on the first side, then I flipped them and added the cheese.</p></div>

If you don&#8217;t have a large enough lid, tin foil would certainly work, and if you are on the grill put the lid on. I let them cook for about 6 more minutes, which is about how long it takes to cook an egg over easy.</p></div>

When the egg whites are mostly hardened I flip them and turn off the heat and let them sit for about 30 seconds. They usually come out perfect. Unless I break one, which ends in me cursing and Tom offering himself as sacrifice. He&#8217;s not picky&#8230; I would love nothing more than to throw it away and start over. My biggest peeve.</p></div>

				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/05/img_1924.jpg"><img class="alignleft size-medium wp-image-337" title="IMG_1924" src="http://asholet.files.wordpress.com/2012/05/img_1924.jpg?w=300&#038;h=200" alt="" width="300" height="200" /></a>I must start by apologizing for not giving my blog the TLC it deserves.  The past couple weeks have flown by, Tom and I started those Insanity workouts, and holy psycho it&#8217;s Insane.  At first I was sure it would be the death of me, but I&#8217;m starting to enjoy it?  Maybe enjoy isn&#8217;t the verb to be used, I sure do love the shape my physique is taking on and how strong my mind and body feels, so you could say, I am enjoying the fruits of my labor.  I find myself craving hearty and healthy foods, and this is one of my favorites!  Have I mentioned I love black beans?  Add some sweet, charred corn and salty, crumbly cheese and you&#8217;ve got the recipe for perfection.  I was in the mood for a taco salad-ish creation and this is what I came up with.  Feel free to take out what you don&#8217;t like or add the things you love.  Recipes should always be a jumping off point, cooking for me is about making what YOU love,  so have fun with it!</p>

<p style="text-align:center;"><strong>Honeywest Lime Chop with Chicken</strong></p>
<p style="text-align:center;">Serves 4</p>
<p style="text-align:left;">For the Honey-Lime Dressing&#8230;</p>

<li>1/4 cup of honey</li>
<li>Juice of 3-4 limes</li>
<li>2 tbsp white vinegar</li>
<li>1 tbsp cumin</li>
<li>1/2 tsp kosher salt</li>
<li>1/4 tsp fresh cracked pepper</li>
<li>1/3 cup olive oil</li>
</ul>

Taste.  I started by adding only 3 limes but when I tasted it I decided it needed more lime and a pinch more salt. Add whatever you feel it needs, and voila, you&#8217;re done.</p></div>
<p>Now prep your chicken&#8230;</p>

I used 3 small chicken breasts cutlets because it was only Tom and I. For a four person serving I would use 4 large chicken breast cutlets. I like the quicker cooking time of cutlets on a grill pan.</p></div>

Toss to coat thoroughly and replace in the fridge to marinate for at least an hour.</p></div>
<p>And for the salad you will need&#8230;</p>

<ul>
<li>1 head of romaine lettuce, chopped</li>
<li>Half of a bunch of cilantro (or more if you&#8217;re OBSESSED with cilantro like I am)</li>
<li>3 green onions, sliced</li>
<li>1 yellow bell pepper, diced</li>
<li>2 handfuls of cherry tomatoes, quartered</li>
<li>2 ears of corn, grilled and cut off the cob</li>
<li>1/2 of an avocado, diced</li>
<li>1 can of black beans drained and rinsed</li>
<li>1/2 of a package of Cotija cheese</li>
</ul>

I did it in the bowl that I assembled the salad in so all that lovely corn juice didn&#8217;t go to waste.</p></div>

They should take about 4-5 minutes per side, or until the chicken is firm. If you push on the chicken and it gives easily it&#8217;s probably not cooked all the way through.</p></div>

It falls apart perfectly when you scrape at it with a fork. Tom and I love this stuff, he actually suggested a bowl of it soaked in the dressing for dessert, apparently those were his two favorite ingredients.</p></div>

This will let the juices redistribute and help keep them moist.</p></div>

I used about a quarter of a cup of dressing altogether.</p></div>

				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/04/img_1577.jpg"><img class="alignleft size-medium wp-image-321" title="IMG_1577" src="http://asholet.files.wordpress.com/2012/04/img_1577.jpg?w=300&#038;h=200" alt="" width="300" height="200" /></a>I found this recipe in the cook book that Barbara, Toms mom(LOVE HER!), gave me; of course I modified it slightly to suit me.  This salad is simple yet very complex in flavor, all in all it&#8217;s a fabulous dish.  I actually had all the ingredients in my house except for the pork chops, so to feed three people it cost me 7 dollars!  I originally only wanted to buy two chops and half the recipe but they only had packages of three, so I reluctantly bought them.  Good thing we had a surprise visitor that night!  My friend Ola stopped by on her way to the gym, so I strong armed her into staying for a light and tasty meal, which only postponed her workout a couple of hours.  I could tell by her mmmmms and aaahhhhhs that she didn&#8217;t mind much, she even stayed to do the dishes!  Much appreciated.  Anyway, that night I wasn&#8217;t sure how it would come out so I didn&#8217;t document the steps with my camera, but it looked so pretty I took some finished product photos.  The meal shocked me with its abundant flavor, healthiness and cheap price tag so needless to say I made it again the next week, and will be doing so often!  When I went to the store the next week they only had really thick cuts of boneless pork chops, I found them to be a bit tough(probably because the marinade couldn&#8217;t fully penetrate) and of course they took a lot longer to cook, so try to get some that are from 1/2 to 3/4 of an inch thick.</p>
<p>Recipe&#8230;</p>
<p style="text-align:center;"><strong>Grilled Balsamic Pork Salad</strong></p>
<p style="text-align:center;">Serves 4</p>
<ul>
<li>1 medium shallot, minced</li>
<li>3 tbsp balsamic vinegar</li>
<li>2 tsp dijon mustard (optional)</li>
<li>3 tsp fresh thyme, chopped</li>
<li>Kosher salt and freshly ground black pepper to taste</li>
<li>1/4 cup extra-virgin olive oil</li>
<li>4  3/4-inch boneless pork chops</li>
<li>3/4 cup red seedless grapes, halved</li>
<li>4 heaping cups baby arugula (I used a baby arugula and baby spinach mix, you can use your favorite dark green)</li>
<li>1/2 cup crumbled gorgonzola or blue cheese</li>
<li>2 tbsp toasted pine nuts (optional)</li>
</ul>
<p>Any time you are grilling up meat, the first thing you should do when you get home from the grocery store is salt your meat and wrap it back up!  The salt will dissolve and penetrate the muscle so that the meat is uniformly seasoned inside and out, and much more tender = melt in your mouth delicious.  Some people say not to do this because it sucks out the juices, NOT true, what is being sucked out is mostly water, further concentrating that delicious meat flavor.  The only time this would not benefit you, is if you are roasting a chicken or turkey with the skin on.  The salt would change the texture of the skin keeping you from getting that yummy crispy, crunchy skin; in this case you would want to salt it just before cooking and then the salt will help form that crust you want.</p>
<p>So salt your meat, no matter what day it is.  You can make this marinade the day before or day of it keeps well and will only get more delicious.</p>

Add a pinch of salt and pepper and taste. Add more if needed.  And that's it, you're dressing is ready.</p></div>

So from the morning before you leave for work to five minutes before cooking, (I would advise at least 4 hours before cooking) it's up to you. When you are ready(your pork should already be salted), add the other half of the thyme, and 3 tbsp of the dressing to the pork and toss to coat. Cover well and return to fridge.</p></div>

They should take about 3-5 minutes per side, depending on the thickness. These took about 8 minutes per side! Way too thick, I'll cut them in half next time if they are this thick.</p></div>

				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/04/img_1614.jpg"><img class="alignleft size-medium wp-image-312" title="IMG_1614" src="http://asholet.files.wordpress.com/2012/04/img_1614.jpg?w=300&#038;h=300" alt="" width="300" height="300" /></a>I read the name for this recipe and was in, it reminded me of a joke from my younger years, and these days anything that makes me feel young is a winner.  I have a hard time legitimizing making sweets, or anything unhealthy for that matter, I just don&#8217;t like having all those naughty things in the house to entice us.  So I do what any loving cook would do, take advantage of my innocent family and friends, and sometimes Toms co-workers.  This week I was going to my dads house so I didn&#8217;t hesitate to jump on making these the minute I found the recipe, my step mom Franny LOVED them, and as she and my brother Josh never have to worry about gaining weight, I dispersed the treats between them and the rest went to work with my dad.  You can shake this up a bit, not a huge fan of Oreos?  Neither is my uncle Bob, Sub them for any cookie or sweet treat you think would be good. Salted caramel will be my next filling, really ANYTHING would be good sandwiched between a fudge like brownie and homemade chocolate chip cookie.  Just make sure you have enough people to share with, you don&#8217;t want these in your house taunting you!</p>

<li>2 eggs at room temperature</li>
<li>2 1/2 tsp vanilla extract</li>
<li>2 1/2 cups flour</li>
<li>1 tsp salt</li>
<li>1 tsp baking soda</li>
<li>1 tsp baking powder</li>
<li>2 cups semi-sweet chocolate chips</li>
<li>1 package of Oreo cookies</li>

<li>10 tbsp unsalted butter</li>
<li>1 1/4 cups white sugar</li>
<li>3/4 cup cocoa powder</li>
<li>1/2 tsp salt</li>
<li>2 tsp vanilla extract</li>
<li>2 eggs at room temperature</li>
<li>1/2 cup flour</li>
</ul>
<p>Preheat oven to 350°</p>

The recipe I found called for a 9x9 pan but all I had was an 8x12 pan. So thats what I used. They came out a little thinner but just as delicious!</p></div>

Whisk until well combined and remove from heat.</p></div>

<p>Recipe&#8230;</p>
<p style="text-align:center;"><strong>Mexican Brown Rice</strong></p>
<p style="text-align:center;">Serves 2-4</p>
<ul>
<li><span class="Apple-style-span" style="line-height:13px;">1 jalapeño, minced</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">1/2 medium shallot, minced</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">3 cloves garlic, minced</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">1 tbsp red pepper flakes, divided</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">2 tbsp olive oil</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">1 cup brown rice</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">1 15 oz can diced or crushed tomatoes</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">water</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">salt and pepper to taste</span></li>
<li><span class="Apple-style-span" style="line-height:13px;">2 tbsp fresh chopped cilantro</span></li>

Sauté for about 2 minutes or until fragrant.</p></div>

Bring to a boil, lower to a simmer and cover. Leave it be for about 35-40 minutes on low heat.</p></div>

<p style="text-align:center;"><strong>Baked Parmesan Chicken Strips</strong></p>
<p style="text-align:center;">Serves 2-4</p>
<ul>
<li>1 1/2 lb package of chicken breast tenders</li>
<li>1/4 cup flour</li>
<li>3 egg whites, whisked together with 1 tbsp 2% milk</li>
<li>1 1/2 cups panko bread crumbs</li>
<li>2 tbsp fresh parsley, chopped</li>
<li>2 tsp garlic salt</li>
<li>2 tsp fresh cracked pepper</li>
</ul>
<p>Preheat oven to 400°</p>

A bowl with your egg whites, milk and a pinch of garlic salt and pepper. Another plate with bread crumbs, parsley, grated fresh parmesan, garlic salt and fresh cracked pepper (shown).</p></div>

Making sure at each step that the chicken is well coated.</p></div>

<li>1 1/2 cups all purpose flour</li>
<li>1 cup yellow cake mix</li>
<li>1/2 cup unsalted butter, softened</li>
<li>1/2 cup granulated sugar</li>
<li>1 tsp vanilla</li>
<li>1/8 tsp salt</li>
<li>2-6 tbsp milk</li>
<li>2 tbsp sprinkles</li>
</ul>
<p>Coating</p>
<ul>
<li>16 oz white chocolate</li>
<li>4 tbsp yellow cake mix</li>
<li>Sprinkles</li>
</ul>
<p>Start with the batter&#8230;</p>

I was left with a really dry batter.</p></div>

Just apply pressure to any part go the dough and if it sticks together and makes an indent, you're ready to roll.</p></div>

<p>Now for the white chocolate coating&#8230;</p>
<p>I&#8217;m not sure why I didn&#8217;t get a picture of the chocolate melting, probably because I was trying to do too many things at once.  Really, I think it&#8217;s because when using a double boiler(a glass bowl over a pot of simmering water), which is nice because you can walk away from it for quite a while without worrying about it burning.  As a matter of fact, the longer you wait the more the chocolate melts, which means less stirring.  Anyway, once the chocolate is smoothly melted you can add the 4 tbsp of yellow cake mix and stir with a fork until smooth again.</p>

Don't worry if there is a void of frosting where the fork was, just dip the fork back into the coating and lightly touch the top of the ball.</p></div>

				<content:encoded><![CDATA[<p><a href="http://asholet.files.wordpress.com/2012/04/img_1397.jpg"><img class="alignleft size-medium wp-image-262" title="IMG_1397" src="http://asholet.files.wordpress.com/2012/04/img_1397.jpg?w=300&#038;h=200" alt="" width="300" height="200" /></a>Who doesn&#8217;t like beans?  I might go further to ask, Who doesn&#8217;t like refried beans?  The word &#8220;fried&#8221; is in the name, they must be good,  which I never understood until I did time at a mexican restaurant.  I worked in the upstairs bar as a cocktail waitress and up there was a Taco Bar, equipped with it&#8217;s own &#8220;Taco Man&#8221; who literally goes by Taco Man, or simply Taco if you&#8217;re friends.  Anyway, the owner of the joint used to order something I&#8217;d never seen before, Taco Man would drizzle some oil on the flat top and when it started smoking he would add a couple scoops of what we call refried beans to the hot oil and flip them a few times until they were crispy and dark through and through.  Curious as to what the hey he was making, I asked, only to be answered &#8220;refried beans&#8221;.  UH&#8230;&#8230;..?  Taco laughed his famously adorable laugh and went on to explain to me that what we call refried beans is only the first step in making them, true refried beans are actually fried in oil or lard before they are finished.  I still like our gringo refried beans better.</p>
<p>So the other day when Tom requested healthy mexican, I knew I wanted to make beans and rice along side my <a title="Mango Shrimp Tacos" href="http://asholet.wordpress.com/2012/04/10/mango-shrimp-tacos/">Mango Shrimp Tacos</a>.  The challenge was how to make it &#8220;healthier&#8221;. Most restaurants use pinto beans to make their refried beans, which are packed with nutrients but black beans have MORE antioxidants, fiber, protein, iron, potassium, and the list goes on, than pintos.  So I chose black, also because I&#8217;m making them myself, they won&#8217;t have any magical lard in them, yay for me.  You can soak and boil your own, I just bought a can from the grocery, way easier and works just as well.  I will say my crazy, sexy, cool Brazilian, Daniela makes some dynamite black beans from scratch and I love her for it, but I just didn&#8217;t have the time.</p>
<p>Recipe&#8230;</p>
<p style="text-align:center;"><strong>Spicy &#8220;Refried&#8221; Black Beans</strong></p>
<p style="text-align:center;">Serves 2</p>
<ul>
<li>1/2 of a jalapeño, minced (seeds and ribs in if you like spice)</li>
<li>1/4 of a shallot, minced</li>
<li>3 cloves of garlic, minced</li>
<li>1 tbsp butter (or olive oil to be a bit healthier)</li>
<li>1-2 tsp red pepper flake (to taste)</li>
<li>salt and pepper to taste</li>
<li>1 15oz can black beans w/ liquid</li>
</ul>

Be careful with your salt at first unless you bought unsalted beans.  Sauté over medium heat for about 4 minutes.</p></div>

Stir well and taste. Always taste your food at every step, this helps you become more familiar with the development of flavor and keeps you from serving not so tasty food. If it could use a little more spice add more red pepper, if it needs salt give it a pinch, and so on. At this point your beans will be a bit soupy, which is normal.</p></div>

If you have a potato masher, us it! I don't so I used to backside of my spoon against the side and bottom of the pan. I didn't take them too far, I like a variety of textures so mine ended up being about half whole.</p></div>

<p style="text-align:center;"><strong>Homemade Corn Tortillas</strong></p>
<p style="text-align:center;">Yields 8 Tortillas</p>
<ul>
<li>1 cup Masa (corn flour) I used Maseca, an instant corn flour which is readily available in the baking isle of your grocers.</li>
<li>2/3 cup of water</li>
<li>1/8 tsp of salt</li>

If you press it down with your fingers and it leaves an indent its ready to start working with your hands. If not add water a tsp at a time.</p></div>

Now cut the dough in half, and cut those halves in half, so you have 4 pieces.</p></div>

Get them started with your palm. Don't worry about the edges splitting, this is normal.</p></div>

The ziploc method is way easier and I'm assuming you don't have a tortilla press. Once the tortilla is inside the ziploc, grab a pot with two handles so you can apply even pressure in your tortilla flattening. Push down as hard as you can then flip the bag upside down and a have another go at it.</p></div>
