Baked Parmesan Chicken Strips

I was making Hot Mustard Sauce for Tom and I needed something for dipping, so I whipped up a healthy version of the delectable goodies he normally eats with his hot mustard.  Chicken strips, usually fried in a thick coating, not so figure friendly.  Here’s an easy way to make a healthy snack or dinner for your kids. Or, in my case, big kid. ;)

Baked Parmesan Chicken Strips

Serves 2-4

  • 1 1/2 lb package of chicken breast tenders
  • 1/4 cup flour
  • 3 egg whites, whisked together with 1 tbsp 2% milk
  • 1 1/2 cups panko bread crumbs
  • 2 tbsp fresh parsley, chopped
  • 2 tsp garlic salt
  • 2 tsp fresh cracked pepper

Preheat oven to 400°

Set up a breading station: One plate with your flour, mixed with a pinch of garlic salt and pepper. A bowl with your egg whites, milk and a pinch of garlic salt and pepper. Another plate with bread crumbs, parsley, grated fresh parmesan, garlic salt and fresh cracked pepper (shown).

First dredge chicken in the flour, then the egg mixture and lastly the bread crumbs. Making sure at each step that the chicken is well coated.

Place the chicken on a greased sheet pan. Bake for 20 minutes or until cooked through.

Serve with your favorite dipping sauce.
